Recipe: Cilantro-Currant Vinaigrette

 

Cilantro-Currant Vinaigrette 

1 hand-full cilantro

1/2 C water

1/4 C currants

1/4 C raw almonds

1/4 C balsamic vinegar

1/8 to 1/4 cup honey, varies with taste

1 tsp onion powder

1 tsp garlic powder

bonus: add a little salt and  pepper if you like ( these days, I never add salt to anything)

 

 

The directions are so easy, it is just ridiculous.  But it tastes so good you will want seconds on your salad and pretty darn healthy to boot.

 

Take all of the above ingredients and place then in the blender. Blend until smooth.  I use a Vitamix but if you are using another brand you may need to use almond butter or chop the almonds fine before adding to the blender.  This recipe- vinaigrette works with fruit and vegetable salad of all kinds with a green lettuce or kale base.
