Greek Style Potatoes

The other day  I was remembering a yummy potato recipe my mom used to make every other week or so-called “Criss Cross Potatoes”.  They were simple to make by cutting in half and cutting slits crosswise and lengthwise, smothering them with ‘margarine” and baking in the oven until brown on top.   I really wanted to create a healthier version of that recipe and I think I have done so with the simple Greek Style Potato recipe. If you like you can make this minus lemon and serve it like baked American fried potatoes for breakfast.  But don’t you just love fresh lemon and herbs in the summertime?  Try this recipe for Greek Style Oven Baked Potatoes.  You will not be disappointed and they are kid tested and approved. (Just make sure you save a few pieces with the parsley for the picky kiddos in your life)

  1. that looks sooo good! I’ll make it for dinner for grilled chicken. I love potatoes, I would eat them every day. One day in mash one day fried :)) My family doesn’t appreciate my passion though.
