Hey, Momma! What’s For Dinner? Fruit Salad, Yummy!

This week’s suppers are full of fresh fruits and vegetables! Yes, folks, summer is here in full swing in Southern California and that means lots of fresh local farm goodness.  From strawberries, watermelon, and fresh citrus fruits, to delicious avocados, local honey, and fresh organic lettuce, you simply cannot go wrong with salads this season, especially fruit salads!

Here is our menu for the week:

MondayMomma’s Famous Spicy Turkey Chili, Gluten Free Cornbread, and fresh strawberries with chopped mint and a drizzle of local honey.
Tuesday–  Grilled Skirt Steak and Chicken Breasts in a citrus marinade, Baked Sweet Potatoes stuffed with fresh guacamole and homemade Picante. ( Make sure to separate marinades when cooking different meats, as they cook for different lengths of time)
Wednesday – BYOS- Family Style Build Your Own Salad or Sandwich. I am making a cashew butter dressing with tons of herbs and a California Balmsic Vinegar, it is a tasty Vegetarian loving treat.

Thursday- Leftovers (Thinking quesadillas for the boys with leftover skirt steak and chicken breast.) Salad for momma.
Friday – Dinner Out
SaturdayHomemade Chicken Tortilla-less Soup with fresh avocado and a watermelon, grape, and mozzarella salad.

Sunday – Family Picnic – Fried Chicken, Cucumber Potato Salad, Deviled Eggs and Peach and Pineapple from the grill.
