Three Cheers for Salad

 Hi, everyone!  This week I am spending time discovering new ways to create whole-food salad dressings.  I have embarked on a longer sugar detox to get ready for a big summer trip and since discovering how great I feel without too much sugar and grains it was a no-brainer.

Hi, everyone!  This week I am spending time discovering new ways to create whole-food salad dressings.  I have embarked on a longer sugar detox to get ready for a big summer trip and since discovering how great I feel without too much sugar and grains it was a no-brainer.

Part of the detox program I follow is eating salads or mostly low-carb vegetable soups for lunch. Eating salads on such a regular basis can really be a test of patience and creativity.  Three Cheers for Salad!  Having a variety of vegetables on hand and prepping them each week is the best way to stay on plan and be successful on a sugar -detox journey.

Delicious Dressing Is A Must

But crucial to all of these fabulous salads for this busy mom is to have delicious dressing on hand to make those salads sing. I find that purchasing fresh herbs along with my groceries and keeping some cashew butter, good olive oil, and a couple of vinegar really helps in creating fabulous dressings. This week I will be sharing my favorite on the blog!

For the menu this week I am adding ground turkey recipes. I want to make a big batch of Paleo Bolognese and Paleo Chili. I do better eating clean when my suppers are filled with bold spicy dishes. I also want to try my hand a making zoodles ( zucchini noodles) into a Ramen dish with spicy coconut curry sauce and tons of vitamin-rich mushrooms and greens.

Here is the menu plan for the week:

Monday – Paleo Pizza with mushrooms and onions, pepperoni of the boys. Green Salad
Tuesday –  Turkey Bolognese over spaghetti squash
Wednesday – Grilled Chicken Thighs with Momma’s Green Beans and Steamed New Potatoes
Thursday – Paleo Chili with Cucumber, Onion, and Tomato Salad
Friday – Leftover Chicken Thighs, Country Style Cucumber Potato Salad, and Watermelon
Saturday –  Dinner Out
Sunday – Salmon over an Arugula Salad, Strawberries, It is strawberry season in Southern California

  1. Hey Pam, I’m from the link-up. I so agree about the salad dressings! I even use them on other cooked veggies sometimes. I’m keeping the “Mama’s Green Beans” recipe. I have green beans that need to be cooked today! Thanks for sharing and nice to “meet you”.

  2. I love Salads and I love this time of year and this week I am going to get a spiralizer so zoodles are in my future – great Menu this week Pam 🙂
