Hey Momma, What’s For Dinner Week # 7

This week the meals are super simple because in our house we begin our Lenten Journey on March 1, 2017, Ash Wednesday. The significance is we will be reducing our food bill and all over spending as part of our Lenten journey.  This will make creating meals for the week super fast so that we all have more time to spend together as a family with the bonus of saving money.  For the next 40 days, our meals will consist of simple pasta, soups, and salads.

Menu Plan for the Week:

Breakfast – Smoothies or boiled eggs and greens for me, Cereal and turkey bacon or raw almonds for the boys.
Lunches – I am eating leftover soups and salads all week.

Monday- Baked Chicken Thighs, enough for two nights, cheesy pasta, and salad.
Tuesday – Leftovers with a trip for ice cream. ( Our Fat Tuesday)
Wednesday – Gluten Free Macaroni and Cheese with Salad Greens.
Thursday –  Chicken Noodle Soup for the boys, with apple slices and Salad for Me.
Friday – Tuna Noodle Casserole – Recipe on the way, but try this one if you need inspiration, with broccoli apple salad, find the recipe here.
S
aturday – Leftovers with mixed fruit.
Sunday – Whole Roasted Chicken, Rice, and Greek Style Green Beans.

It is being created as a way to reflect during Lent for those who practice.  If you are curious about Lent, just ask. But remember, I am a busy working mom, but if the question is out of my reach I will ask someone who knows!
My husband observes Lent with me, but he is not Catholic. He is just a  sweet doting husband. 🙂   Two years ago who fasted from Diet Coke and have not had a drop since.  So, in a way Lent helped kick the habit.  Update – Here is the 40 Days 40 Photos A Visual Lenten Journey
