Hey Momma! What’s For Dinner?

 

This yummy dinner plan will keep my family fed this week without breaking the budget.Happy new week friends!  Spring is finally here! Yesterday we took a family walk in the Antelope Valley Poppy Reserve, and it was beautiful.  We then headed over for a yummy New Orleans style dinner at Rabalais’ Bistro in Santa Paula, California. I had a delicious catfish po’boy, fried green tomatoes,  deviled eggs garnished with pickled beets. It was a wonderful family day.

This week I am so jazzed for sharing our What’s for Dinner menu after being inspired by the fabulous New Orleans style cuisine from Rabalais’ Bistro.

What’s For Dinner

Monday Slow Cooker Beans and Rice with Cucumber and Tomato Salad and sliced apples with a peanut butter caramel sauce.
Tuesday–  Crispy chicken thighs, leftover beans and rice, and fresh melon for a treat.  ( I will be eating a portion of arugula instead of the rice tonight)
Wednesday – Slow cooker turkey breast, slow cooker mashed potatoes, and siracha green beans. ( Carrots and cucumber sticks for our picky eater in the house)
Thursday –  Leftover turkey breast cooked down with bbq sauce served on French bread with a big green salad.
FridayShrimp Tostadas or Bean for those who are not on team shrimp. We grew up eating tostadas weekly, so I am kind of excited.
Saturday – BYOS – A friend of mine has several children and somehow created a make your sandwich night, and they loved it. Of course, my boys are older, but hey, I figured why not?  So this Saturday I will make sure to have plenty of good bread, lunch meats and cheese and a relish tray.  They will probably just make PB and J, but I am kind of excited. I am thinking that Build Your Own Sandwich might become a weekly thing. 
Sunday  – Dinner Out –  I love Indian food and what is not to love about supporting local family owned restaurants?

Hints and Tips for Making Dinner This Week

Hint – Cooking a large portion of pinto beans on Sunday evening is going to help save time through my week.  Plus, I will have leftover beans and rice for my meal and plan on making a Paleo Version without beans for the freezer.

Tip: You can book a frozen turkey breast in the slow cooker.
