Welcome to a brand new week!  Spring has sprung so I am in the mood for sprucing up the house a bit and cooking fresh, yummy meals with lots of veggies and seasonal fruits.  Easter is this coming Sunday so I have been scouring the web looking for simple side dishes to go with ham and grilled chicken. I will share my final decisions this week in a post.  Easter is such a  wonderful way to add more family traditions to our fond food memories.  I can remember eating canned Le Sueur Peas with mashed potatoes and ham along with my mom’s yummy pineapple gravy.  I am not sure what I will be making this year because I am really eating less and less meat so I need to add some proteins to some salad so that my meals are balanced while still remembers my boys are carnivores FOREVER! 🙂

Here is my menu plan for the week. I am really cracking down on eating more vegetables and a couple of fruit servings per day.  I have been only eating meat at dinner (supper time) for over 15 days now.  If something mind-boggling happens, like dropping 10 pounds or running a marathon by hopping on one-foot. I will be sure to let you know.  But so far, I just feel lighter on the inside and a bit more peaceful.

 

MondayCrockpot  Shredded BBQ Chicken with garlic mashed potatoes and broccoli salad.  (Yum, just pre-made this tonight and it is fantastic.)  I use leftover grilled chicken breast for my bbq chicken.

Tuesday –  Taco Night – My son’s favorite meal of the week.  Ground Turkey tacos with all the yummy condiments.

WednesdayAgainst the Grain Pizza Bar – 2 Frozen pizzas and lots of fixings for my family to dress their side of the pizza.  Yumtastic and Fun to boot.  You can buy six in a box at Amazon but I find my pizzas at Sprouts and Whole Foods.

Thursday –  Leftover Picnic or Sandwiches and Soup  –  We still have a family dinner planned but I am prepping for Easter so keeping it as simple as possible.

Friday –  Crispy Baked Cod (Paleo), Oven Fries and Salad

Saturday – Dinner Out

Sunday – Easter – I know we are having ham and lots of fixings, details will be ironed out by Tuesday morning.  I am pretty sure there will be some kind of lemon treat and something with lots of chocolate and of course plenty of Southern Sweet Tea.

Cleaning List for the Week

Monday Deep Clean Kitchen – Choose wisely on major appliance or area to deep clean. This I suggest cleaning and organizing inside of 4 or more drawers or shelves. Simple yet needed every three months or so throughout the year.

Tuesday – Bathroom – Give the bathrooms and a good scrubbing, especially, tubs, showers, sinks, and mirrors.

Wednesday   Dust and Mirrors and Windows –  Dust all the furniture and doo-dads, shine all mirrors and windows on the inside.

 Thursday  Add some flowers here and there for Easter or spring.  Look at inspiring photos of spring on the web and at Houzz.com

Friday Declutter-one area for 5 to 10 minutes or catch up on anything that was missed during the week. We are working on closets. Keep it simple, Friday is for family and fun!

Saturday-Linens and Extra Laundry Don’t you love the idea of fresh smelling sheets and towels!

Sunday  Happy Easter to those who observe and Happy Spring to Everyone!  Do something fantastic for the family and enjoy the day!

  1. My mom used to serve La Sueur peas, too! Now, I need to hear more about that pineapple gravy. Yum! We ate vegetarian for a whole year – didn’t lose a pound. 😉 But I did learn to convert a lot of our favorite recipes and in almost every case we have kept the vegetarian version even though we now eat meat again. I followed you here from Organizing Junkie. I’d love to have you visit me at Life With Dee. One of these days I’ll put all my vegetarian recipes in one place but if you don’t mind browsing, you may find a few you’d like to try. This week’s menu has a link to Black Bean Enchiladas which we love.
