Country Potato Salad With CucumbersHi friends!  Today I am sharing my recipe for Country Style Potato Salad with Fresh Cucumbers.

Summer is filled with wonderful adventures including belly flops into the pool,  leap-frog in the garden and dripping chocolate cones.  I can’t remember a summer in my youth that did not involve a big BBQ at my Granny Vega’s with several aunts cooking up wonderful dishes and uncles working the grill for dozens to feed nieces and nephews while listening to my granny give instructions to all of them. And let me tell you, they learned from the best.

My granny was one of the most talented self-taught cooks (chefs)  I have ever known.  She had no need for a book-shelf full of cookbooks or a Kindle filled to the brim with instructions from Betty Crocker, she cooked with a natural sense of taste and texture and most importantly from the heart. It was fantastic!  I would like to think my instinct for tossing together a good meal came from her and that my family and friends enjoy the adventure of Momma’s cooking as much as I loved my granny’s.

Country Style Potato Salad with Fresh Cucumbers

This Country Style Potato Salad with fresh cucumbers is one of my favorite culinary adventures and is sure to please your family and guests. It is filled with fresh vegetables and crunchy dill pickles and does not take long at all to cook and tastes pretty darn good to boot. ( Even my picky husband had a big heaping spoon-full or two.)

Country Style Potato Salad with Fresh Cucumbers

Country Potato Salad With Cucumbers

Country Style Potato Salad with Fresh Cucumbers is a yummy dish for any celebration. The crunchy fresh cucumber makes the dish light and refreshing.

Prep Time 10 minutes
Cook Time 25 minutes
Inactive Time 10 minutes
Total Time 45 minutes

Ingredients

  • 1 1/2 lb red potatoes, peeled and cubed
  • 2 tsp. salt
  • 6 hard-boiled, peeled and coarsely chopped
  • 1 hard-boiled and peeled  possible garnish
  • 2 ribs celery, sliced 1/8
  • 1 small red onion or a 1/4 of a large red onion, sliced 1/8 of an inch and sparsely chopped
  • 1/2 c dill pickle gherkins sliced 1/4 inch and sparsely chopped 1/2 c peeled Persian cucumber, sliced 1/4 inch and sparsely chopped (again, chunky is best)
  • 2 to 3 Tablespoons prepared yellow mustard
  • 1/2 c real, full-fat mayonnaise
  • 1/4 tsp. salt (more or less, to suit your taste)
  • 1/4 tsp. white or black pepper
  • Hungarian paprika, for garnish

Instructions

  1. Add 4 quarts of water to a 6-quart pot and bring to a rolling boil over high heat. Add potatoes and salt and cook until potatoes are tender when pierced with a fork. (about 25 minutes
  2. Drain potatoes well in a colander and return them to the hot pan for a minute to dry out excess water.
  3. Place the potatoes, eggs, celery, onion, pickles, and cucumber into a large mixing bowl.
  4. Add mustard and mayonnaise folding in gently until well combined
  5. Add salt and pepper to taste gentle folding to keep potato pieces bite-sized..
  6. Refrigerate until ready to serve.
  7. Just before serving, sprinkle with paprika

Notes

This salad is perfect for your 4th of July Celebration or any occasion.

I would make the recipe ahead that morning to serve at lunch or dinner to get the flavors well-infused before serving.

  3. I have not heard of a persian cucumber…can you tell me more about it? I love cucumbers and I love potato salad but have never tasted the two in the same recipe! sounds like you had a close relationship with your grandmother, how wonderful for you. One of mine cooked the best chicken and dumplings I have yet to ever taste…and fresh! My grandpa would walk to the local chicken farm and get the chicken, break its neck and then they plucked the feathers…can you imagine now having time for all of that before you start rolling out your dough? 🙂

    1. oh my goodness, my granny did raise chickens but I never witnessed the harvest, so to speak. Persian cucumbers are in most markets, it is the small ones, about length of your hand and they are usually in a plastic clamshell for protection.
      Mmm, dumplings. my favorite. lol
