Country Style Potato Salad with Fresh Cucumbers is a yummy dish for any celebration. The crunchy fresh cucumber makes the dish light and refreshing.
1 1/2 lb red potatoes, peeled and cubed
2 tsp. salt
6 hard-boiled, peeled and coarsely chopped
1 hard-boiled and peeled possible garnish
2 ribs celery, sliced 1/8
1 small red onion or a 1/4 of a large red onion, sliced 1/8 of an inch and sparsely chopped
1/2 c dill pickle gherkins sliced 1/4 inch and sparsely chopped 1/2 c peeled Persian cucumber, sliced 1/4 inch and sparsely chopped (again, chunky is best)
2 to 3 Tablespoons prepared yellow mustard
1/2 c real, full-fat mayonnaise
1/4 tsp. salt (more or less, to suit your taste)
1/4 tsp. white or black pepper
Hungarian paprika, for garnish

I would make the recipe ahead that morning to serve at lunch or dinner to get the flavors well-infused before serving.
