One of my favorite food memories of my own momma’s was the smell of Ketchup and Lemon Pork Chops  The rich tomatoes baking with brown sugar and lemon smelled like summer BBQs and the sweet and tangy taste of the slow-cooked sauce and the bright tart lemons made my mouth water the minute I walked up to the house coming home from school.  Gosh, don’t you want your kids to have the coming home for dinner memories?

My family does not really eat pork often, but we do eat chicken and enjoy spicy food!  Last night I baked up a batch of my  Sticky Sweet Sriracha Chicken Recipe which has strong hints of that recipe my mom made for dinner at least every other week in my childhood.  My husband seemed to like it and I am pretty sure our son would have sung its praises if he did not have a cup of green beans staring at him from the plate.

(note: This summer is the summer that my son will love green vegetables, I just know it!)

This easy recipe for chicken legs of thighs is cooked kind of low and slow. You really want to give that sauce a chance to cook down on the meat, this gives it that fun ‘sticky goodness”.

Sticky Sweet Sriracha Chicken Recipe

Sticky Sweet Sriracha Chicken is made with economical chicken legs or thighs. It is sweet and sticky and so scrumptious, a real hit with the family. With the yummy honey and spicy sriracha mixed with Ketchup, what could you not like? Enjoy!

Ingredients

Scale
  • 12 pieces chicken thighs and/or legs bone in skin on.
  • 2 c organic ketchup or whatever you have on hand
  • 1 c honey
  • 1/2 c soy sauce
  • 1/4 c sriracha hot sauce
  • 2 tbsp. olive oil

Instructions

  1. In a large mixing bowl combine ketchup, honey, soy sauce, Sriracha or Hot Chili Sauce, Olive Oil and Garlic Powder, gently whisk until blended.
  2. Spray a 9 x 13 pan with Cooking Oil Spray
  3. Place chicken legs or thighs skin side up into greased pan. Pour sauce mixture on top, be generous and cover each piece.
  4. Bake uncovered for 60 minutes at 350 degrees. The internal temperature chicken should read at 165 degrees.
  5. When chicken pieces register correct temperature, remove from oven and let rest for 10 minutes. Serve and Enjoy!

Notes

Please serve with lemon wedges, there is nothing like a fresh squeeze of lemon to brighten a dish.
