Fresh Mint and Cilantro Melon Salad Recipe
Sweet and refreshing fresh mint and cilantro, with melon a hint of lemon and olive oil. The best summer side dish!

- 2 cups Canary or Honeydew melon seeded and cubed
- 2 cups seedless watermelon cubed
- 1/2 cup chopped cilantro
- 1/2 cup mint
- juice of a half a lemon
- 1 teaspoon olive oil
- 1 teaspoon salt
- Add Canary melon and watermelon cubes to bowl
- Toss with olive oil, lemon juice mint, and cilantro.
- Sprinkle with salt
Serve immediately or chill for 1 to 2 hours before serving.
