Hey Momma! What’s For Dinner? Saying Yes! To Macaroni Salad

Hi, friends! I love Sunday afternoons. I get most of my planning for the week out of the way. Sitting down with a hot cup of tea, my trusty sticky notes and favorite pens, and my planning calendars. I just love my Erin Condren Planner! Woot!

Each week I jot down what we are eating, what posts I plan to work on, my “day work” schedule, and any research I need for my volunteer work at Church.  When you add that to parenting and taking care of the house, it can be quite overwhelming. But writing it down really is the key to my sanity!

I really believe the key to a “happy home, happy life” is lots of love, lots organizing, and lots of planning.
And that is what you will find on the blog in the next few days, along with, a yummy new recipe!

Saying Yes! To Macaroni Salad

I am super excited about this weeks menu! I am going to try and recreate my favorite Hawaiian Macaroni Salad into a Gluten Free version.  Mind you, I do not, as a rule, eat macaroni salad often, it is quite rich, but when I do I want it to taste as good as I can and having a gluten free version will be a big help.

Menu Plan For The Week

Monday – Sheet Pan Supper – Chicken Legs, New Potatoes, Corn on the Cob slathered in Grassfed Ghee and garnished with finely chopped chives.
Tuesday – Skillet Grilled Steak, Gluten-Free Macaroni Salad, Green Salad, and Strawberries
Wednesday – Leftovers
Thursday – Against The Grain Pizza with mushrooms, olives, and pepperoni – I add onion to my side. 🙂
Friday – Dinner Out
Saturday – DIY Sandwich Night, I will be enjoying a big salad with yummy slice of watermelon>
Sunday –  BBQ Chicken on the grill, asparagus, baked sweet potatoes, and HUGE glasses of iced tea. ( It is really warming up here in Southern Cali.!)

  1. Sounds like another week of good eating. You have to be organized with a busy life and you have a good routine to keep it in line. Have a good week.

  2. I would love to be able to make Iced tea Pam I love it from our supermarket though and I have never had Macaroni and Cheese or a Macaroni salad – it is just not an Irish thing !! I must try it though as my lot love pasta and I have a great gluten free pasta now.
