You Will Need
- 4 c chopped romaine lettuce
- 1 c chopped cucumber
- 1 c diced red tomato
- 1 c cooked garbanzo beans
- 1/4 finely chopped red onion
- 1/4 c chopped cilantro
- 1/4 c finely chopped - seeds and white membrane removed
- 1 Juice of one lime
- 1 tbsp. olive oil
- Salt and Pepper to taste
Instructions
- Combine all vegetables turning carefully to not bruise the lettuce. Add lime juice, olive oil and salt and pepper. Folk in dressing and serve immediately or chill for 1 hour before serving.
