Shaved Brussels Sprouts Apple Cranberry Salad is tasty, colorful, and loaded with healthy vegetables, nuts, and fruits. It is the perfect combination of sweet and crunch! The toasted almonds and pecans make this dish extra special, especially for the holidays!

To be honest, I created this recipe on a whim this Thanksgiving. My favorite lettuce “Romaine” was recalled in California. Such a bummer!

I walked through the grocery thinking I would just make a veggie tray. I began to notice all green vegetables missing off the produce shelves! I fussed a little and then a sparkle of two lone GREEN packages caught my eye. Shaved Brussels Sprouts!

What Can I Make With Brussels Sprouts?

For a brief second, I thought, maybe I can roast some Brussels Sprouts and Butter Nut Squash? Then I remember the amazing apples I received in my produce box at the beginning of the week. So many vibrant reds with gorgeous veins of gold. I always choose the most interesting names on the list and I knew the Cortland would be the perfect salad apple. The Cortland apple is sweet and firm, a wonderful contrast with Brussels Sprouts.

When I got home, I grabbed a few items to make a dressing for the salad. I noticed a bag of pecans and slivered almonds and it reminded me of this amazing Lebanese rice dish (Hashweh). They fill it with toasted nuts and a bit of cinnamon. It is fantastic, and I wanted to have that yummy toasted crunch in my Shaved Brussels Sprouts Apple Cranberry Salad!

My frustration with Romaine lettuce was officially over, and I began whipping up a yummy maple vinaigrette for the sprouts and apple salad.

How To Make Brussels Sprouts Apple Cranberry Salad

Making this colorful and delicious Brussels sprouts salad is simple!

The Vinaigrette

In a small mixing bowl combine vinegar, maple syrup, dijon, mayonnaise, salt pepper, and olive oil. Whisk until ingredients until well combined.

You will need shaved Brussels sprouts. I bought mine shaved, you can use a food processor to shave the sprouts or take you time and cut with a knife. I found my bag at Target, no shame, no salad! I mean, picking were slim with greens when I created this recipe as mentioned above.

Make The Shaved Brussels Sprouts Salad

In a large mixing bowl, add three cups shaved Brussels sprouts, two cups cored and quartered thin sliced apples, a quarter cup chopped red onion, a third cup dried cranberries and the vinaigrette. Toss to combine, then add your apple slices and carefully toss again. I save a few slices to pretty-up the bowl at the end with the yummy toasted nuts.

Transfer to a serving dish and garnish with the toasted nuts and a few dried cranberries. Enjoy!

Shaved Brussels Sprouts Apple Cranberry Salad
  • Fresh and Festive! This shaved Brussels Sprouts Apple Cranberry salad is simple to make and the perfect side dish for the Holidays!  It is also a great dish to make for any gathering that needs a salad or two.

Ingredients

For the vinaigrette:

  • 2 Tbsp.  White balsamic vinegar or apple sider vinegar (both are awesome!)
  • 1 Tbsp.  Maple syrup
  • 1 Tbsp. mayonaisse 
  • 1 teaspoon Dijon Mustard
  • 1/4 cup olive oil
  •  1 teaspoon each of salt and pepper

For the Brussels sprouts salad:

  • 9 oz package - Shaved Brussels sprouts , around 3 cups
  • 2 good-sized cored apples sliced thin, around two cups
  • 1 cup toasted nuts, I used pecans and slivered almonds
  • 1/3 cup dried cranberries 
  • 1/4 cup diced red onion
  • salt and pepper to taste

Instructions

Vinaigrette: In a small mixing bowl whisk together vinegar, maple syrup, mayonaise, Dijon  mustard, olive oil and a teaspoon each of salt and pepper. 

Salad: 

In a large mixing bowl, add three cups shaved Brussels sprouts, two cups cored and quartered thin sliced apples, a quarter cup chopped red onion, a third cup dried cranberries and the vinaigrette. Toss to combine, then add your apple slices and carefully toss again. Salt and pepper to taste.

 

Notes

To prevent apples from browning, soak in a cup of water with 2 Tbsp lemon juice or try my newest favorite trick. Immerse in water with 3 Tbsp honey!
