Hi Y’all, today I am sharing my recipe for Spicy Southern Funeral Potatoes.

Traditional Southern Funeral Potatoes are a standard home recipe in the South.  A go-to dish, not just for funerals, but for picnics, church suppers, and other community gatherings. You can make an impressive casserole in a pretty dish for a little money and everyone will love it.

I make the creamy potato mixture with shredded potatoes, cream of mushroom soup, sour cream and butter. I mean, seriously, this is savory decadence.  I love using organic mushroom soup, you can truly taste the difference.  However, use what you have on hand!

The topping is a butter and cornflake mixture that is just delicious.

I also use the brand Simply Potatoes, you can find it in the refrigeration section of chain groceries, usually by the eggs!

Comfort Food Does Not Have to Be Bland!

I decided one day that the casserole was kind of bland. Friends, comfort food does not have to be bland!  I grabbed a can of diced mild peppers and added it to the potato mixture.  This helped a little and was still kid friendly. The next time I tried it with the hot-version of the canned diced peppers, and it was fantastic!

The best part about using the canned diced peppers, I have a choice of the heat ratio!  This spicy version of Southern Funeral Potatoes has become a tradition for our Christmas Brunch and other special breakfast times when we are serving a crowd. So darn Good!

Spicy Southern Funeral Potatoes Recipe

Traditional Southern Funeral Potatoes with the added yumminess of diced chilis!

Ingredients

Scale
  • 2 packages  Simply Potatoes (Shredded) 20 oz. or 2.5 packs Frozen Shredded Hash browns Thawed and Drained.
  • 1-pint sour cream
  • 2 cans cream of mushroom soup ( I love this brand)
  • 4 oz. can diced, green chiles, fire roasted mild, hot for those who like it super spicy
  • 1/4 cup butter melted
  • 1 tsp. salt
  • 1 tsp.onion powder
  • 2 cups shredded cheddar cheese
  • 3 cups Corn Flakes, crushed Mixed with1/4 cup melted butter
  • Cooking Spray for 9 x 13 Pan

Instructions

  1. Combine sour cream, soup, and diced green chilis in a bowl. Mix it well. Add salt, onion powder, and cheese to mixture and mix until all combined.
  2. Add potatoes to creamy mixture and stir until all combined. 
  3. Spray clean 9 x 13 pan with cooking spray. Place potato mixture into greased 9×13 pan.
  4. Spread crushed corn flakes evenly on top.
  5. Pour melted butter over crushed corn flakes.
  6. Bake uncovered at 350 for 40-50 minutes.

Notes

Variations: Add one cup chopped ham or cooked ground sausage.
Add one small sauteed onion and a 1/2 cup chopped red pepper.

  2. This is such comfort food. I have never even heard of it but this recipe is one my family will enjoy. Almost like potato pancakes done in a single pan. Looks delicious.

  3. Butter is only listed once on the ingredients but two times in the instructions… how much to use????

  4. It’s still in the oven, can’t rate it yet. But easy to mix together. I added a couple of Ts of chopped red pepper for the color. Taking it to church this morning for brunch after church. It’s take -down -the -Christmas- decorations day.
