  1. In a heavy 10 to 12 inch skillet melt butter over moderately high heat. Add shredded carrots, soy sauce and a pinch or two of salt and pepper.
  2. Fry carrots stirring occasionally until golden brown.
  3. Taste and adjust seasonings.
  4. Serve hot.

Notes

If you are Vegan use coconut aminos and olive oil or avocado oil.
