Family Friendly Waldorf Salad Recipe

A fresh and delicious way to celebrate fall and spring is a wonderfully crafted Waldorf Salad.

The salad first tantalized palates at the Waldorf Hotel in New York around 1893-96. I can happily say this is one of my favorite treats and I enjoy making variations to lighten the calories or jazz up the crunch. 

Waldorf Salad is perfect for busy families because you are already chopping up apples and celery and tossing in walnuts and raisins, so the  younger picky eater can have a bitty serving of a few raisins and apples to go with their meal and perhaps some crunchy walnuts as well!

Ingredients

  • 1/4 cup mayonnaise
  • 1/4 organic yogurt
  • 1 tablespoon white sugar
  • 1 tablespoon lemon juice
  • 1/8 teaspoon salt
  • 1 large apple or two small apples — peeled, cored, and chopped
  • 1 cup of thinly sliced celery
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins
  • 4 cups organic mix greens

Directionssalad tip

In a medium bowl, whisk together the mayonnaise, sugar, lemon juice, and salt.

Stir in the apples, celery, walnuts, and raisins. Chill until ready to serve on a bed of crisp organic mixed greens. 

P. S. I like to mix the dressing with my greens.  The dressing is just so yummy!

Fun Stuff:   After you have had the more traditional version add in some just for fun items like grape or chopped jicama and if you are feeling wild and crazy sliced radishes.

  • 1 large apple peeled, cored, and chopped
  • 1 cup of thinly sliced celery
  • 1/2 cup chopped walnuts
  • 1/2 cup golden raisins
  • 4 cups organic mix greens

Instructions

    1. In a medium bowl, whisk together the mayonnaise, sugar, lemon juice, and salt.
    2. Stir in the apples, celery, walnuts, and raisins.
    3. Chill until ready to serve on a bed of crisp organic mixed greens. 

Notes

For variation try, Just for fun mix in….

1/2 cups sliced red or green grapes or diced jicama
