What’s For Supper? #86 Tacos and Joes! That is right folks! I am taking simple supper to new levels this week and we are having some good eats! The best part, I will cook three main dishes and then ride the piggyback meals all the way to Saturday! Woot!

I love, love love, using my slow cooker for busy weeks! And this one is a doozy! Exams, dance recital, refinish floors in my new office, and still working and being a fulltime mom!

Dinner should not be a chore. It really should not! Making dinner should be a thoughtful process with a focus on the WHY!

Why do we make dinner each night for our families?  Because we care about their health and what they put in their bodies!

There are so many reasons WHY we cook dinner.  Make a list in your head or on a piece of paper and tape that sucker up so you can see it and remember.

We love our families so much that even on out tired days we know they need good nutrition.

Sure it’s okay to go to Taco Bell once in a while or even GASP the golden arches but our dailies should be real food cooked at home!

And now that I have for some reason jumped on the “Supper” Soap Box let me share what we are having for supper this week.

Sunday

Crossing my fingers for a road trip to Gus’s Fried Chicken. ( The best darn fried chicken in AMERICA!)I mean it could happen, right? However, if the traffic is crazy then we will have a BBQ at home. We really enjoy our Sunday BBQ nights especially when it is the whole family sitting together and enjoying some good home-cooking.

The picture above is my youngest son’s first taste of fried chicken. The owners at the original Gus’s Fried Chicken in Tennessee rushed to the local grocery to get this guy at a hot dog in case the chicken was too spicy. I thought that was the sweetest thing. Little did we know that he would LOVE the spicy chicken. Heat any chicken leg someone would spare! It was so darn cute!

Gus’s is in Los Angeles now ( Hallelujah!), and the traffic is always crazy, but it is close to Ikea so it is like a Mom-cation when we get to go. ( Big Smiles, Hints Galore to my Husband)

However, here is my BBQ lineup if the plans change:

Dry Rub Ribs
BBQ Half Chicken
Country Cucumber Potato Salad
Southern Deviled Eggs
Arkansas Cucumber and Onion Mint Salad

Tacos, Carnitas, and Tuna Grape Salad

Monday

Slow Cooker Chicken Carnitas ( New Recipe on the Blog)
We will eat the carnitas in soft corn tortillas with lettuce, avocado, and my yummy Chipotle Salsa!

Tuesday

Leftovers -We will have plenty from Sunday Supper.

Wednesday –  Burrito wraps with leftover Chicken Carnitas,  black beans, brown rice (I buy one microwave bag full) and drizzled with yummy taco dressing.

Wednesday

Ground Turkey Sloppy Joes
Baked Sweet Potato Fries
Sliced green veggies ( cucumbers most likely)

Thursday

Frozen Pizza Night

I love Against the Grain Gourmet Pizza  It really is a good frozen pizza. I buy mine at Sprouts.

We will have California Strawberries as a treat.

Friday

Date Nigh – Woot!

Saturday

Sandwich Board with Chips and Guacamole.

I love making a sandwich board for the guys. But I always forget to take a photo! I am going to pinky promise a photo right now!

 

Delicious Apple Grape Almond Tuna Salad RecipeLunch Bonus: I am making up a batch of Tuna Salad. This week grapes are everywhere in the grocery so I am eating well with my Tuna Grape, Apple and Almond Salad! It is so good!
