Recipe: Yellow Squash Southern Style

Delicious yellow squash cooked to perfection.

Ingredients

  1. 4 to 6 Yellow Squash sliced into 1/2 inch discs
  2. 1/2 white  onion, sliced thin
  3. 1 Tablespoon bacon grease or butter – I use grass fed Ghee butter.
  4. 1/2  cup water
  5. salt, pepper and optional but colorful crushed red pepper (only a teaspoon or two)  to taste.

Instructions

  1. Place squash and onion in a skillet or small dutch oven, whichever one you have that has a lid.
  2. Add bacon grease or butter and about 1/2 cup of water, bring to a simmer over medium-high heat.
  3. Reduce heat to medium and cover and check to see if you might need to add another 1/4 cup water to keep the squash from sticking to the pan.
  4. Cook ten minutes longer or until squash is fork tender and onions are translucent.
  5. Add crushed red pepper. Strain out of the pan and salt and pepper to taste. Serve warm.

Notes

Top this yummy squash recipe with crumbled bacon for a little crunch! Bacon is always welcome!
