Strawberry Chinese Chicken Salad Recipe

Fresh and delicious strawberry Chinese chicken salad is so good your family will think you have been moonlighting as a chef! This recipe is healthy and celebrates California Strawberries with a delicious sesame strawberry vinaigrette.

Ingredients

Units Scale

  • For the Salad
  • 1 cup strawberries stemmed and chopped
  • 2 tablespoons sugar or honey
  • 5 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon soy sauce
  • 1 teaspoon grated ginger (optional)

For the Salad

  • 3 cups cooked shredded chicken meat (we used rotisserie chicken)
  • 4 cups chopped romaine lettuce
  • 1 cup shredded red cabbage
  • 1 cup sliced strawberries
  • 1/2 cup grated carrots
  • 1/4 cup shelled edamame
  • 1/4 cup green onion thinly sliced
  • 1/4 chow mein noodles, for serving
  • 1/4 toasted sliced almonds for serving
  • For the Strawberry Sesame Vinaigrette

Instructions

Strawberry Vinaigrette

To make the vinaigrette combine strawberries,sugar, rice vinegar, sesame oil, garlic powder, soy sauce and if you like, grated ginger in a small food processor or blender.  Serve immediately or store for up to two days.

 

The Salad 

To assemble the salad, place chopped romaine lettuce in a large bowl, top with red cabbage, carrots, edamame, green onion and shredded chicken. Then scatter strawberries on top and garnish with chow mein noodles and almonds. Serve dressing on the side.

Option: Toss the lettuce, cabbage, carrots, edamame, green onion, and shredded chicken with the dressing. Then add strawberries, chow mein noodles, and almonds. 

It works beautifully both ways! 

Notes

Feel free to add other favorite vegetables to this recipe. A few slices of avocado are always yummy!
