Thai Tuna Salad With Peanut Dressing

Tuna Salad Ingredients

  • 2 5oz cans tuna, drained
  • 1/2 diced and seeded cucumbers
  • 1/2 cup diced red bell pepper
  • 1/2 finely diced carrots
  • 1/2 cup finely diced red onion
  • 1/4 cup chopped cilantro
  • the juice of half a lime
  • 1 tsp ginger powder or fresh grated
  • 1 Tsp Turmeric
  • 1 tsp ground pepper
  • salt to taste

Peanut Dressing Ingredients

1/2 cup peanut butter natural, unsweetened
• 2 TBSP low sodium soy sauce
• 1 TBSP apple cider vinegar
• 2 TBSP brown sugar
• 2 tsp sriracha
• 1 TBSP fresh lime juice
• 1 tsp ginger powder
• 2-4 TBSP water


Instructions

Tuna Salad

  1. Gather ingredients.
  2. Combine all ingredients into a  large mixing bowl and mix well.
  3. Serve as a sandwich filling or luncheon salad with cucumber slices, tomato wedges, and carrot sticks.

Peanut Dressing

1. Combine all ingredients except water.  Whisk to fully combine.
2. Add water, 1 tablespoon at a time, until desired consistency is reached. Serve this as a dipping sauce or dressing.

Notes

Rice crackers are a nice addition to this Thai Tuna Salad with Peanut Dressing.

The peanut dressing makes an excellent dipping sauce for vegetable crudites and toast!
