Zesty Lime Chopped Salad is a simple salad and the perfect quick side for grill nights! This recipe isfull of crisp veggies, protein-packed chickpeas, tomato, lime and a kick of jalapeno. The perfect fresh salad for busy days when you want something quick and healthy.

Ingredients

  • 8 cups chopped romaine lettuce
  • 2 cups garbanzo beans (1 can), drained and rinsed
  • 1 cup sliced English cucumber
  • 2 cups diced tomato
  • 1/2 cup diced jalapeño (use less for mild)
  • 8 teaspoons olive oil
  • Juice of 2 limes
  • Salt and pepper to tast

Instructions

  • Add the chopped romaine to a large bowl.
  • Add the garbanzo beans, cucumber, tomato, and jalapeño.
  • Drizzle the olive oil over the salad.
  • Squeeze the fresh lime juice on top.
  • Sprinkle with salt and pepper.
  • Toss gently until everything is mixed.
  • Serve right away and enjoy!
