Ground Beef Cottage Cheese Taco Bowls with Sweet Potatoes

A high-protein cottage cheese taco bowl made with seasoned ground beef, steamed sweet potatoes, cottage cheese, avocado, sazón seasoning, and hot honey. This easy recipe makes four filling bowls.

Ingredients

  • Ground Beef

    • 1 pound ground beef
    • 1 tablespoon prepared garlic
    • 1 to 2 teaspoons salt, or to taste
    • 1 teaspoon ground cumin
    • 2 teaspoons ancho chili powder or regular chili powder
    • Black pepper, to taste
  • Bowls

    • 1 bag pre-cut sweet potatoes, steamed
    • 2 cups cottage cheese
    • 1 avocado, quartered or sliced
    • Sazón seasoning, for topping
    • Hot honey, for drizzling
    • Butter lettuce or shredded lettuce, optional
    • Cilantro, optional

Instructions

 

  1. Add ground beef to a skillet over medium heat.
  2. Add garlic, salt, cumin, chili powder, and black pepper.
  3. Cook until beef is browned and fully cooked.
  4. Drain excess grease if needed.
  5. Divide beef into 4 portions.
  6. Steam sweet potatoes according to package directions, then divide into 4 portions.
  7. Build each bowl with one portion of beef, one portion of sweet potatoes, ½ cup cottage cheese, and ¼ avocado.
  8. Sprinkle with sazón seasoning.
  9. Drizzle with hot honey.
  10. Add lettuce or cilantro if desired.
  11. Serve warm.

Notes

For a lighter bowl, serve the beef, cottage cheese, sweet potatoes, and avocado over butter lettuce or shredded lettuce. If you are tracking calories or protein, divide the ground beef and sweet potatoes into four equal portions before assembling.

Taste before adding extra salt, especially if your sazón seasoning contains sodium.
