These Ground Beef Cottage Cheese Taco Bowls are my Momma Can version of the viral cottage cheese bowl with ground beef, and friends, this one is filling.

It has seasoned ground beef, steamed sweet potatoes, creamy cottage cheese, avocado, hot honey, and a sprinkle of my favorite sazón seasoning to make the whole bowl pop with color and flavor.

Think taco bowl, but without the pile of chips or tortillas. You still get the warm, savory beef, the creamy dressing-like cottage cheese, the sweet potatoes, and that little sweet-spicy finish from hot honey.

It is simple, hearty, high in protein, and makes four bowls, which is exactly the kind of recipe busy moms and caregivers need when the week gets loud.

Ingredients

For the Seasoned Ground Beef

  • 1 pound ground beef
  • 1 tablespoon prepared garlic
  • 1 to 2 teaspoons salt, or to taste
  • 1 teaspoon ground cumin
  • 2 teaspoons ancho chili powder or regular chili powder
  • Black pepper, to taste

For the Bowls

  • 1 bag pre-cut sweet potatoes, steamed
  • 2 cups cottage cheese, divided
  • 1 avocado, sliced or quartered
  • Sazón seasoning, for finishing
  • Hot honey, for drizzling
  • Optional: butter lettuce or shredded lettuce
  • Optional: fresh cilantro

I use a two heaping teaspoons of Sazon for most chili and cumin recipes. It is so good!

How to Make It

  1. Brown the ground beef in a skillet over medium heat.
  2. Add prepared garlic, salt, cumin, chili powder, and black pepper.
  3. Cook until the beef is browned and fully cooked.
  4. Drain excess grease if needed.
  5. Divide the cooked ground beef into 4 portions.
  6. Steam the pre-cut sweet potatoes according to the package directions. Mine usually take about 5 to 8 minutes, but every microwave is different.
  7. Divide the sweet potatoes into 4 portions.
  8. To build each bowl, add one portion of ground beef, one portion of sweet potatoes, ½ cup cottage cheese, and ¼ avocado.
  9. Sprinkle the bowl with sazón seasoning.
  10. Drizzle with hot honey.
  11. Add lettuce or cilantro if desired.
  12. Serve warm and enjoy.

This bowl is inspired by the viral cottage cheese and ground beef bowl, but this is my version with a little more flavor and a little more Momma Can practicality.

I used prepared garlic because it is easy to keep in the fridge, and honestly, busy moms need ingredients that help dinner happen faster. Fresh garlic is wonderful, but the little tub or squeezy bottle of garlic is a lifesaver on a busy night.

The sweet potatoes are another shortcut I love. You can buy them already peeled and cut, then steam them in the microwave. Some bags are microwave-ready, and some can be steamed in a bowl with a paper towel on top. Just follow the package directions and cook until tender.

If you are watching calories closely, measure your portions. This recipe makes four bowls, so divide the beef and sweet potatoes into four portions. The cottage cheese is ½ cup per bowl, and the avocado is ¼ avocado per bowl.

If you want the bowl to feel bigger without adding a lot of calories, serve it over butter lettuce or shredded lettuce. It fills the bowl, adds crunch, and gives you that taco salad feeling without needing a pile of chips.

And yes, cilantro would be delicious here. I did not have any on hand, so the avocado brought the green and saved the day.

Easy Swaps

  • Use ground turkey or ground chicken instead of ground beef.
  • Use regular chili powder if you do not have ancho chili powder.
  • Use taco seasoning if that is what you have.
  • Add shredded lettuce to make it more like a taco salad.
  • Add cilantro, green onion, or jalapeño for extra flavor.
  • Use plain honey if you do not like hot honey.
  • Add crushed tortilla chips or Takis if you want crunch.
  • Use roasted sweet potatoes if you prefer to cook them from scratch.
