A fresh summer cottage cheese bowl made with Harvest Moon Seedless Watermelon, cottage cheese, mint, honey, and pistachios. This easy high-protein bowl is perfect for breakfast, lunch, or a simple summer snack.
Harvest Moon Seedless Watermelon is a seedless Moon and Stars watermelon type with a dark green rind, small yellow “stars,” and larger yellow “moons.” Any fresh seedless watermelon will work in this recipe.
Add the pistachios right before serving so they stay crunchy. If your watermelon is very sweet, you can use less honey or skip it.
