I found a beautiful Harvest Moon Seedless Watermelon at Trader Joe’s, and friends, this little melon stopped me in my tracks. It is a seedless Moon and Stars watermelon type, which means it has a dark green rind with little yellow “stars” and larger yellow “moons.” How cute is that?
Harvest Moon is a newer twist on the old-fashioned Moon and Stars watermelon. It has crisp, sweet red flesh, but it is seedless, which makes it so easy to use in bowls, salads, snack trays, and summer recipes.

I used Harvest Moon Seedless Watermelon from Trader Joe’s for this recipe. It is a seedless Moon and Stars watermelon type, with a dark green rind, small yellow “stars,” and larger yellow “moons.”
You do not have to use Harvest Moon watermelon to make this bowl. Any fresh watermelon will work. But if you see one of these pretty little melons at the store, grab it. It is firm, crisp, sweet, and so much fun for summer.
I like keeping cut watermelon in the fridge when the weather gets hot. It is easy to grab, sweet enough to feel like a treat, and beautiful in salads, bowls, and snack plates.
A little note about the pistachios: they are delicious, but they can run away with the calories if you let them. I used just ⅛ cup chopped pistachios for crunch. That was plenty.
I used honey from Trader Joe’s for this bowl, but local honey is always a lovely choice when you can find it. Use what you have, honey. We are not making breakfast complicated
