Pea Mint & Cottage Cheese Caesar Salad

A fresh and savory high-protein cottage cheese bowl made with peas, mint, chopped Caesar salad, and crunchy crouton crumble.

Ingredients

  • 1 cup cottage cheese
  • 1/2 cups frozen peas, thawed
  • 6 fresh mint leaves, torn
  • Black pepper, to taste
  • 1 cups salad greens bowl
  • 1 tablespoon Caesar dressing
  • 1/4 cup Caesar croutons, crushed

Instructions

  • Thaw peas and let cool if warmed. ( I pop frozen peas in the microwave for 1 minute or 2)
  • Gently mix cottage cheese, peas, mint, and black pepper.
  • Place Caesar salad greens on one side of a bowl.
  • Add cottage cheese mixture to the other side.
  • Drizzle salad with dressing.
  • Sprinkle crushed croutons down the center.
  • Garnish with mint and serve.

Notes

No extra salt is needed because the Caesar dressing and croutons add enough salty flavor. For best texture, add the crouton crumble right before serving
