Ingredients
- 1 cup cottage cheese
- 1/2 frozen peas, thawed
- 6 fresh mint leaves, torn
- Black pepper, to taste
- ⅓ bag chopped salad greens
- 1 tablespoons Caesar dressing, or to taste
- 1/4 cup Caesar croutons or crouton crumble from the salad kit
Instructions
- Thaw the frozen peas. You can let them sit in the refrigerator ahead of time or warm them briefly in the microwave for about 1 minute, then let them cool.
- In a small bowl, gently stir together the cottage cheese, thawed peas, torn mint leaves, and black pepper.
- Add the chopped Caesar salad greens to one side of a large bowl.
- Drizzle the greens with a small amount of Caesar dressing.
- Spoon the cottage cheese, pea, and mint mixture onto the other side of the bowl.
- Crush the Caesar croutons and sprinkle them down the middle for crunch.
- Garnish with a small mint sprig if desired.

Peas and mint were made for each other. No pun intended, but truly, they are so fresh and lovely together.
This bowl uses about one-third of a bagged Caesar salad kit, which makes it easy to pull together fast. The salad kit usually has enough for several servings, but I like using plenty of greens because they add fiber, crunch, and freshness.
I do not add extra salt to this bowl because the Caesar dressing and croutons already bring plenty of flavor. A little black pepper is all it needs.
