I have finished the final draft of our Non-Traditional Easter Menu for this year. I was trying my best to keep it simple but had to have some family favorites and a couple of new recipes that I will be sharing this week. Yummy Apple Pecan Broccoli Salad with a dazzling honey dijon dressing and Cucumber, Radish, Mint Salad. I will also be making traditional deviled eggs and my mom’s pineapple gravy, which I am very excited about! Easter is a wonderful time for family and good food, a time to reflect generously on what we have to be thankful for and the joy of Spring and the beauty of our faith.
Important: I truly feel that Easter Meals unless catered, should not be fussy and make the moms exhausted from cooking for days. ( You know like Thanksgiving and Christmas) If you LOVE cooking all days and planning for weeks in advance than I tip my hat to you. However, if you have three toddlers and a husband who is working full time plus give yourself a break! Make some make-ahead dishes like desserts and dips. Keep the menu plan simple and give yourself a break! Your kids will remember you happy or grumpy at dinner. Which do you want? Happy mommy or grumpy mommy!
Note: This is my “company is coming” Easter Menu Plan that includes the dishes my family loves. If it is just a few of us I cut the menu down. If there are more I order the berry and watermelon trays and the desserts from a trusted market.

Super simple- Sliced Thin Cucumbers, Radish, and Red Onion, 1 tbsp chopped mint, and 1/4 cup white vinegar, 1/8 cup vegetable oil, 2 teaspoons sugar. Mix well, add a little black pepper and salt to taste. - Southern Deviled Egg and Pickle Tray
