Hi, Friends! Happy New Week! I am so excited to share some super news.  Hey Momma! What’s For Dinner? #45This week I created a super fun set of challenge to help get our kiddos ready for the new school year. And now our Menu Plan this Week!

We are prepping for a trip to my hometown next week. I am so excited that I am choosing food that reflects all the good eats in Memphis and its surrounding area.

Monday – Leftover Indian ( Seriously, it is wrong to waste good Indian Cuisine)
Tuesday – Intantpot Pulled Pork with Memphis Style BBQ sauce and Caroline Red Slaw.  Serving it up with some Vegan Baked Beans and Kettle Style Chips
Wednesday –  Paleo Fried Catfish, Baked sweet potato fries, Watermelon Chunks and some leftover Vegan Baked Beans.
Thursday – Tomato Sandwich with Duke’s Mayo, Broccoli Slaw and Apple Slaw with Golden Raisins, Fresh Berries.  You know a fresh home grown tomato makes the best darn sandwich ever, right?
Friday – Gus’ Fried Chicken, Crispy Fried Okra, Fried Green Tomatoes and Plenty of Sweet Tea to wash it down.  Welcome to Momma’s cheat day.
Saturday – Family BBQ
Sunday – DIY Sandwich night, with salad and fruit to round it out.

I hope you all have a wonderful week! I can’t wait to get started on the Back To School Challenge!

Pam
