What’s For Dinner?
Hi, Friends! Happy new week and happy meal planning Thank you for stopping by to read Hey Momma What’s For Dinner! I am really excited about this weeks family dinners especially Monday as we are having some of my favorite Southern Treats. I am also sharing my healthier way to make refried beans for Mexican supper nights, it is super simple and yummy. A bonus, my favorite simple pasta recipe!
Here is What’s For Dinner This Week
Monday: BBQ Chicken Tenders on the Grill with southern yellow squash, mashed potatoes, black-eyed peas, and sliced vine-ripened tomatoes.
Tuesday: Leftovers with a summer treat of Southern Style Biscuits and Strawberries. (Yum!)
Wednesday: Ranchero Vegan Pinto Beans, Cornbread, with cucumber, onion, and tomato salad
Thursday: Super Simple Pasta – Pasta drizzled with olive oil, sparsely chopped cherry tomatoes mixed with freshly chopped basil and oregano with a bit more olive oil. It is fantastic and a yummy dish for gardeners to have in their arsenal.
Friday: Leftover Ranchero Pinto Beans ( cooked them using a no-soak method), mashed and dashed into yummy refried beans without tons of oil. I use vegetable or chicken stock instead of frying and add cumin, chili powder, garlic powder, and onion powder. We will make burritos and tacos with all the fixings including my new favorite toppings thinly sliced radish. ( I am so hooked on radishes lately)
Saturday: Dinner Out – We found this place in town called the Veggie Grill.It serves an all Vegan menu and is completely awesome.
Sunday: Grilled Chicken breast and vegetable skewers. Served over a bed of lettuce for me and rice for the boys. I may make a peanut dipping sauce for my youngest son, it really is his favorite thing in the world. Find the recipe I use here.

That peanut sauce looks good. I’ve tried a couple but I haven’t found *the one* yet. I’ll put this one on for next week!
