Summer Slim Down

Happy Easter! I hope you and your family had a wonderful spring break and a joy-filled Easter. We had a wonderful week of family and sunshine with lots of yummy food.  The best part was being surrounded by the energy of my niece and nephew as well as seeing my granddaughter every single day.  It really was a short break of renewal and with so much poolside time and real wake-up call of getting fit for summer.  This week’s menu is going to be super healthy. I personally indulge like crazy on Easter Sunday and have a treat or two so it is back to business this week.

Here is our menu for the week.

Monday –  Blackened Chicken Breast, Cajun Sweet Potato Fries, Chopped Kale salad with mandarin oranges and sunflower seeds tossed with a yummy honey dressing.
Tuesday – Leftover Chicken over salad greens, rice for the boys and fruit salad in the neat spiral mason jars.
Wednesday – Pan-seared free range steak, baked potato bar, and a green salad.
Thursday – Leftover steak over arugula greens, Mac and Cheese for the boys.
Friday – Indian Out!
Saturday – BYOS ( Build Your Own Sandwich and/or Salad)  and Family Movie Night
Sunday – Baked Half Chicken with Paleo BBQ Sauce, my famous Country Potato Salad, and Cucumber Salad.

Summer Slim Down – Get Active
My husband and I are huge fans of keeping track of exercise and steps on our Apple Smart Watch and for a year we challenged each other with our Fitbits.

This week our step goal is 20,000 per day!  I will have to walk while I work! Seriously!

I would never be able to achieve such a crazy goal without my Leslie Sansone walk DVD collection.

I would love to hear how you encourage each other in your family to get active!
