It is a new week! We are knee deep in a rainy Monday here in Southern California in our neck of the woods.

I had this perfect menu planned for the week using lots of pantry items as needed during these crazy times. But alas, the rain had me flip a couple because rain is such a mood changer.

When I hear rain, it is soothing and refreshing for about the first hour. Then about 4 hours in, I am thinking enough already! Give me some sunshine!

So, I have flipped the menu plan this week and added some good ol’ Corn Chowder.

Such delicious menu ideas. I love how you add raw fruit or vegetables with your sandwiches or main dishes. I will try to do that more. I will be stopping by more often…thanks for the inspiration.
