Easy Meal Planning For Busy Summer Days

Hi, friends! Welcome to a new week!  We have been traveling quite a bit, I am so ready for an at home time with an organized week of meals and dragging my kid back and forth to orchestra camp. Because this is a busy week I am cooking up some beans, meats, and other goodies to set up a taco, rice bowl, and potato bar at least three times this week.  Everyone in my house is eating differently these days, my husband is still Vegan, I am paleo, and my son eats cupcakes, meat, and french fries.Having these build-it-yourself food bars make for Easy Meal Planning For Busy Summer Days

Meal Plan  This Week:

Monday– Grilled Chicken Taco Bar – Making enough to chop and freeze for the potato bar and rice bar. This chicken will be flavored with lime, a bit of honey, and garlic.  We are reducing our meat consumption so one generous sized chicken breast per meal is plenty.  In addition to the chicken, I am pressure cooking black beans, making fresh salsa, and guacamole.

Tuesday – Baked Potato Bar – Using the same taco stuffers with the potato bar but adding tons of spices to the beans to make it like a  spicy bean chili to stuff the potatoes. This supper is super vegan-friendly.

Wednesday – DIY Sandwich night with leftover salsa and tortilla chips.  Yeah for this simple yet effective dinner that gives busy moms a break!

Thursday –  Rice Bowl Bar – I will be adding can of rinsed garbanzo beans to the leftover chili mix along with sauteed onions and peppers and serving this over rice. Garnishes will be chopped chicken, raw diced onions, sliced avocado, and a cucumber and radish salad with a white balsamic vinaigrette.

Friday – Family Pizza Night- I love Against the Grain Frozen Pizzas!  You can find them at Sprouts and Wholefoods. I will check on Walmart and other stores, but so far no luck. They simply have the best gluten free crust. I buy them in bulk and put them in the freezer then the boys can add their topping choices.

Saturday- Date Night – Hubby and I  will invite meat loving boys, but mot likely it will be just the two of us at the local Vegan restaurant. Yum! They have an amazing burger made with Beyond Meat with yummy melted Vegan cheese.  You can find the Beyond Burgers at Wholefoods and Safeway.

Sunday -Quesadillas to eat up any remaining frozen leftovers from our Taco, Potato, and Rice bar. I freeze the salsa in small portions as well as the beans and meat. Makes for super quick dinners.  Yum!  The best part, my young teen learned to make quesadillas in school!  So daddy and son will be manning this dinner while I relax and drink iced tea on the patio.
