Make Your Rotisserie Chicken Work Harder
A typical rotisserie chicken provides approximately 3 to 3½ cups of meat. Separate it while it is still slightly warm and divide the meat according to your plans.
I often save the breast meat for salads and bowls and use the flavorful dark meat in casseroles, enchiladas, and soups. If you cannot use everything within a few days, freeze the extra meat in recipe-size portions.
