We are gearing up for a busy season of family time and summer memories! That means I need to spend less time in the kitchen and more time with my kids and husband!  Hello, my friend the slow cooker and my other pal the freezer.  We are going to have a blast this summer and food prep is the key to less time in the kitchen and more time with the family!

Sunday – Road Trip

I am working hard this week to get ahead to spend some quality time with my boys.  I am crushing on the idea of touring a bit of Route 66 and sharing a shake and fries with my guys.

Monday – Food Prep

We will be enjoying some indoor grilled chicken breast, with steamed potatoes and steamed broccoli. I am packing up several containers for healthy lunches and dinners this week. So I am doubling the chicken and the veggies and placing them in containers for folks to grab on busy nights.

I bought two sets of these containers. They are the bomb!

Tuesday – Chicken Carnitas

Open Face  Chicken Carnita Corn Tortilla Tacos with Fried Chili Powder Potatoes

Slow Cooker Chicken Carnitas – Y’all my teen son, the PICKY eater, loves this recipe. It makes me happy when he truly enjoys what I cook. I mean it is not broccoli, but it is still real food home cooking! ( This is a double batch recipe today, just double the ingredients with the handy built-in  in the recipe block below!)

We are serving these yummy carnitas tacos with Spicy Fried Chili Potatoes and Pico De Gallo.   I am hoping to hit the farmer’s market to make my own Pico with heirloom tomatoes, it really ups the yum!

Wednesday – Pan Fried Pork Loin with mango chutney

Pan fried pork loin medallions 

with a sweet bit of Mango Chutney

Sauteed Garlic Spinach

Or might use my new recipe for Stir Fry Carrots!

Sliced Heirloom Tomatoes and carrot sticks for the picky eaters.

Thursday  – Leftovers

What is not to love about leftover pork loin and grilled chicken. Toss a simple salad and dinner is amazing!

Friday – Dinner Out

Looking to eat some delicious local crab cakes. I love crab cakes!

If you would like to whip up a batch on your own, try this recipe.  It calls for reduced fat Ritz crackers, but honestly use whatever crackers you have on hand. Don’t dare miss out on crab cakes over reduced fat Ritz Crackers!

Saturday – BYOS—– Build Your Own Sandwich Night!

Sandwiches, chips, and dip! This gal is taking it easy!
