I am so excited for Mother’s Day this year. Well, I am always excited to be given scrambled eggs in bed with hot coffee and smiles from the guys in my life. But this year, I know that a few miles away my son will be surprising his beautiful wife with her first Mother’s Day card and other surprises as they are expecting a beautiful baby girl in October. Hooray!

Mother’s Day Brunch was not really a thing for me growing up, my mom’s family was so large (13 brothers and sisters) that every single holiday meal included so many items that the idea of writing them down is comical. But with my smaller group of family, brunch with pretty flowers and napkins and a planned menu is totally doable and fun.

My favorite brunch recipes are French Toast Casserole, Spicy Cheesy Hashbrown Casserole aka Funeral Potatoes, and Chicken Enchiladas. I know it is a crazy mix but we love spice stuff around here.
