- 2 cups chopped cucumber
- 2 cups chopped peaches
- 2 cups Pico De Gallo
- 1 tablespoon fresh squeezed lemon juice
- 1/2 teaspoon cumin
- 1 pinch of cayenne pepper (if desired)
- salt to taste
Notes
Place cucumber, peaches, Pico de Gallo ( store bought is fine), in a large glass bowl. Sprinkle with salt, add lemon juice, cumin and pinch of cayenne stir well.
