This White Peach and Nectarine Salad with Cucumber and Red Onion is a delightful symphony of flavors and colors that will brighten up any late summer or early fall day. Ingredients:

Salad:

  • 2 white peaches, ripe yet firm
  • 2 nectarines, ripe yet firm
  • 1 cucumber
  • 1 small red onion

Dressing:

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons white balsamic vinegar
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Aleppo pepper flakes for a touch of heat and color.

Instructions for White Peach Nectarine and Cucumber Salad

1. Prepare the Peaches and Nectarines:

  • Wash the white peaches and nectarines thoroughly.
  • Slice them into chunky bite-sized pieces. You can choose to leave the skin on for added texture and color.

2. Slice the Cucumber:

  • Wash the cucumber, cut lengthwise, and then cut each length into two strips. Next cut across into bite-sized pieces. If the cucumber has a tough skin, you can peel it or leave some strips for added visual appeal.

3. Thinly Slice the Red Onion:

  • Peel the red onion and slice it into thin slivers. If you find the raw onion flavor too strong, you can soak the slices in cold water for a few minutes to mellow it out.

4. Assemble the Salad:

  • In a large mixing bowl, combine the sliced peaches, nectarines, cucumber, and red onion. Gently toss them together to make sure fruit and cukes are distributed evenly.

  • In a small bowl, whisk together the extra-virgin olive oil, white balsamic vinegar, salt, and freshly ground black pepper until well combined. Taste the dressing and adjust the salt and pepper to your liking.

  • Store salad in fridge until ready to serve. My personal preference is to allow it to sit out of the fridge for at least 15 minutes to take the chill off before serving.

Notes

Add other fresh fruits to this recipe with ease! Grapes, fresh herbs like mint and basil, oranges, kiwi. The simplicity of the dressing allows for lots of flexibility.
