Simple Oven Roasted Corn on the Cob
My southern taste buds always do a little happy dance when sweet corn is in season. Thanks to Costco it seems like sweet corn season is nearly year round! Who can pass up a big platter of buttery roasted corn on the cob? Not this gal! Roasted corn is so much better than boiled. Roasting ears of corn on the grill are fabulous but sometimes the grill is not the best place to be, like windy rainy days!. One benefit of grilling corn on the cob is keeping the husk on. I am always surprised how easy it is to remove the husk, butter it up and enjoy. But folks, weather can really hamper your grilling time. Learning to roast corn in the oven is a must-have recipe in any busy mom’s toolbox.
The pre-packaged corn comes at Costco comes husk free. I just remove what is left of the corn silk, rinse and pat dry with clean paper towels.
It is so easy, and if by any chance you have leftovers you can slice it off the ears and add it to salads, soups, chilis, and salsa! Corn has no limits! Add a cup full to your cornbread batter with a finely diced seeded jalapeno and make some tasty cornbread for a steaming bowl of spicy turkey chili. ( Yes, we have a recipe ready for you!)
