Welcome back to another week of simple, delicious dinner inspiration! Each week, I share a handful of real food recipes—some from the blog, others from around the web—all chosen with busy families in mind. Whether you’re cooking for one or feeding a full house, there’s something here for everyone.

This week’s menu includes a few cozy, comforting dishes to help warm you up—especially with so many of us still dealing with icy weather (even Florida’s feeling it!). I’ve also included a couple of easy ideas for Super Bowl Sunday, because game day snacks are half the fun, right?

Here’s to making dinnertime easier, tastier, and just a little more joyful.

🍋 Monday: Buttery Lemon Parsley Noodles Easy Recipe & Veggie Sides

Start the week with something light and comforting—Lemon Butter Parsley Noodles. They’re quick, flavorful, and perfect for both grown-ups and little ones.
Serve with:

  • A crisp green salad
  • Veggie sticks (for the picky crew)
  • Warm garlic bread to round it out—because nothing says comfort like a buttery slice of bread!

🌮 Tuesday: Easy Skillet Chicken Enchiladas + Grandma’s Iceberg Slaw

This is one of our family-favorite dinnersSkillet Chicken Enchiladas made super easy using rotisserie chicken. It’s fast, flavorful, and always a hit.

On the side:
A quick, refreshing iceberg lettuce slaw inspired by my Grandma Vega’s youngest sister (whose name is escaping me today—anyone else have moments like that?).
Here’s the simple slaw recipe:

  • Shredded iceberg lettuce
  • Thinly sliced onions
  • A splash of vinegar + a pinch of sugar
  • Salt & pepper to taste

It’s crunchy, sweet, tangy, and perfect with those cheesy enchiladas.


🍲 Wednesday: Cozy Chicken and Rice Casserole

Midweek calls for comfort food, and this Chicken and Rice Casserole is just the thing. It’s warm, hearty, and perfect for those extra-busy evenings.

Keep the sides simple:

  • Toss together a green salad
  • Or heat up a can of green beans with a drizzle of olive oil and a sprinkle of garlic powder. Done and done.

🍖 Thursday: Slow Cooker BBQ Beef Sammies or Stuffed Potatoes

Let the slow cooker do the work today. Make tender, flavorful  Slow Cooker BBQ beef brisket and serve it your way:

  • On buns for BBQ sammies
  • Or over baked potatoes with all your favorite fixings

Sides to serve:

  • Veggie sticks for the little ones
  • Classic coleslaw for the grown-ups (or the brave kids!)
