This simple cucumber and onion salad recipe is a must for summer when cucumbers are plentiful and bbq and picnic suppers are on the calendar.
Crisp cucumber, sweet onion and apple cider vinegar with a hint of sugar come together for the perfect crunchy salad.

Growing up, I can remember picking cucumbers out of a shared garden at my Grandma’s house in Arkansas. It was in the same town as the garden that inspired my Arkansas Cucumber, Radish and Mint Salad at my Uncle Aceil’s house. We would pick a big bowl full and eat them sliced with heirloom tomatoes and scallions or whip up a tangy batch of cucumbers and onions. Today, I am sharing our favorite family recipe for Cucumber and Onion Salad.

My Favorite Cucumbers

I like to mix up my cucumber and onions salad with small pickling cucumbers and English cucumbers. I love having a little variety in size. I peel them, but it is a preference, not a rule!

I prefer smaller cucumber for taste and imagine I learned this way because at the end of the growing season cucumbers can yellow and get bitter.

We peeled and sliced and sprinkled with salt, let them sit for a few minutes. and then rinsed with water. This helps remove the bitter taste. Larger cucumbers are better in a salad seeded because the seeds can grow tough.

Removing Bitter Taste From Cucumber

I discovered a new trick I want to try. Cut the ends off better cucumber and rubbing one piece against the cut and then repeat on the other side. This releases a white foamy substance cucurbitacin which causes the bitter taste.

Ingredients For Cucumber and Onion Salad

Any cucumber will do, but I like the taste of the English cucumber and the small pickling cucumbers. I use Vidalia onion. The red onion will work and I suppose you can use any onion however it helps to have the sweetness of the Vidalia! I use a good-old-fashioned apple cider vinegar and love it! It seems to be the healthiest one you can use, and it tastes pretty darn good. 
This recipe has garlic powder, so there is no mincing of the fresh garlic.

I have a picky eater in the house and he will eat my cucumber and onion as long as there is nothing suspicious like bits and pieces of garlic or any sign of spinach or kale. So win!

How To Make Cucumber and Onion Salad

  • Peel and slice cucumbers and add to a large glass bowl.
  • Add sliced Vidalia onion, a half cup water, half cup apple cider vinegar, two teaspoons white sugar and a teaspoon each of salt and garlic powder.
  • Mix ingredients and let marinate for two or three hours for best flavor.

Enjoy cucumber and onion salad chilled or at room temp, it works both ways. This makes it the perfect picnic food!

Simple Cucumber and Onion Salad Recipe

Crunchy and flavorful salad made with cucumbers, onion, and vinegar. Perfect for bbq and picnics.

Ingredients

  • 6  washed, peeled and sliced pickling cucumbers or 2 English cucumber wash, peeled, and sliced.
  • 1/2 cup Apple Cider Vinegar
  • 1/2 cup water
  • 2 teaspoon white sugar 
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • Add salt and pepper to taste after marinating. 

Instructions

1. Mix vinegar, water, garlic powder, and salt in a large mixing bowl.

2. Add cucumber and toss to coat all slices.

3. Marinate in fridge for 2 to 3 hours. Taste and adjust seasons.

4. Serve and enjoy! 

Notes

Marinate for two to three hours for optimal flavor. 
Serve with a sweet bbq or tucked into a grilled hotdog with sweet pickle relish!
