My uncle Aceil always had a big garden growing on “The Hill” his family lived on.  He was a damn good gardener and was always as kind and friendly to us hungry kids.  He did not run us off if we picked a tomato off the vines for snacking while we desperately waited for dinner. In fact, he encouraged it.  I never saw my uncle not busy working on some kind of project in the garden or around the house. He was always ready to share how to grow vegetables in red clay soil or how to keep the caterpillars from eating all your tomato vines.

With this lesson in gardening, there would be a story to share about Arkansas, the Navy, or the wife and kids, (my aunt and cousins). I soaked it up like a sponge.

Of course, I lived a state away, but my time on “The Hill” and its big garden and loving family has always been a major factor in why I love cooking with fresh ingredients and telling stories.  Storytelling and food are part of my heritage.

And yes, picking your fresh veggies from the garden is a luxury many do not have any longer, but these days that is not a problem.

No garden, no problem!

Modern groceries always have cucumbers, radishes, and mint! That is why this recipe is so wonderful, you can make it any time you want! Heck, even Target has cucumbers, radishes, and mint! TARGET!

Cucumber, Radish, Red Onions and Mint Salad Dishing Up the Cucumber Salad

Dishing up a pretty salad is about as good as Southern cooking gets around this house. To serve a pretty salad I use either glass bowls or white ceramic.    My photo is a small fruit bowl from our everyday dishes, Pottery Barn. I serve with a slotted spoon because no one wants sweet vinegar seeping into their meatloaf or fried chicken!

Arkansas Cucumber, Radish, And  Mint Salad

Delicious and refreshing Arkansas Cucumber Radish and Mint Salad. The perfect summer harvest dish!

Prep Time 15 minutes
Total Time 15 minutes


  • 1 cup white vinegar
  • 2 tablespoons extra virgin olive oil
  • 4 tablespoons granulated sugar
  • 1/4 cup chopped fresh mint (don't forget to remove stems)
  • 1/4 cup finely diced red onion
  • 1 teaspoon salt ( more if you are feeling it needs it)
  • 1 English cucumber, washed and sliced (3 cups or so)
  • 1 bunch radishes, washed and sliced ( about 2 cups)


  1. In a large bowl whisk together vinegar, olive oil, sugar, and salt.
  2. Mix until sugar and salt have dissolved.
  3. Add cucumbers, radishes, red onion, and mint.
  4. Stir to coat vegetables.
  5. Serve immediately or keep chilled in the fridge before serving.


This yummy cucumber salad is perfect as is however if your garden has a surplus of red, yellow, or green peppers then add those as well.
