Island Fruit Slow Cooker Shredded Chicken Tacos

Everyone once in a while I see a jar on a shelf and the label just calls my name. Momma, momma, buy me, take me home! It often happens at the farmer’s market and many times at our favorite Cheese Shop in Claremont, California. (Must share some recipes using their cheese soon!)

This time it was Trader’s Joes. I spied a jar of mango, pineapple and jalapeno salsa. The artwork reminded of our favorite travel destination, Jamaica. I knew that jar would come home with me, the minute it called my name.

Island Style Chunky Fruit Salsa

As soon as I got home, I placed the jar on the shelf above the kitchen sink, right next to the flour and sugar. This is where my food found treasures sit so I can admire them before I decide the best way to enjoy the treat. It is truly a place of honor, often you will see some fresh herbs in glasses and a unique spice blend. The jarred salsa stood proudly waiting its turn for dinner that week.

We purchased some wonderful tilapia filets and a bag of tortilla chips. I thought mango and pineapple suit a light fish and we were out of tortilla chips. I wanted to taste the salty chips against the sweet and spicy fruit salsa.

Then as I was about to open the jar and spoon some in a bowl, my slow cooker caught the corner of my eye. It was as if it knew that amazing salsa with its spicy jalapeno and golden pineapples and mangoes would make the best island-style tacos.

I had recently been a little obsessed with my shortcut chicken thigh Carnitas and was ready for a change. I had planned on ground turkey and chicken mix for our next taco night. However, my guys love mango and I dig a pineapple. Island Fruit Shredded Chicken Tacos just made the menu cut for dinner!

I grabbed my trusty 4 -quart Crock-Pot and plugged it in.

How To Cook Island Style Shredded Chicken

Here is some good news! This recipe has a whopping total of 3 ingredients, 4 if you like it extra hot. Six boneless chicken thighs, One and a half cup Trader Joe’s Island Style Salsa, 1 heaping tablespoon ground cumin and for extra heat add a teaspoon of ground red pepper of a half teaspoon of Scotch Bonnet ground pepper. (Scotch Bonnet is like Habanero, so go easy!)

Place chicken thighs, salsa, and spices into the slow cooker and cook on high for four hours! Shred chicken and mix with remaining sauce. You can cook the meat on low for six to 8 hours but I find boneless chicken cook wells in four hours on high.

What To Serve With Island Fruit Slow Cooker Shredded Chicken Tacos

Serve your yummy Island Style Shredded Chicken Tacos over rice and beans or tortillas garnished with shredded red cabbage, diced mango and or pineapple, chopped onion, chopped cilantro, and even some sour cream or cheddar cheese if that is your jam. I like my tacos simple with just the shredded chicken, a bit of mango and cabbage. It is beautiful and healthy!

Island Fruit Slow Cooker Shredded Chicken Tacos

Island fruit shredded chicken tacos are sweet with a hint of heat. 

Prep Time 5 minutes
Cook Time 4 hours
Inactive Time 4 hours
Total Time 8 hours 5 minutes

Ingredients

  • 6 boneless, skinless chicken thighs
  • 1 1/2 cups Island Style Fruit Salsa  (see notes for other ideas)
  • 1 tablespoon cumin
  • optional 1 teaspoon ground cayenne or 1/2 teaspoon dried ground scotch bonnet

Instructions

  1. Place all ingredients in slow-cooker and stir to combine.  
  2. Cook on high 4 hours or low 6 to 8 hours. 
  3. Drain excess liquid. Shredded chicken with a fork and mix to distribute remaining sauce.
  4. Serve over rice or tortillas. Top with favorite toppings. Consider fresh diced mango, red cabbage, red onion, and cilantro. These pair very well with the Island Style Shredded Chicken. 

Notes

Store leftovers in the refrigerator for up to two days.  Freezer well.
