One of my favorite treats is a fruit salad. But often fruits are out of season are pricey. I can make this light tropical fruit ambrosia salad recipe year-round right from the pantry! It is so good that I have to give away the leftovers or I will march to the fridge every hour for a spoon full.

I stock my beloved pantry with many delicious basics for this recipe. These include pineapple, mandarin oranges, maraschino cherries.  I always have coconut and pecans in the freezer as well as a pint of sour cream because I love it on so much stuff.

The sweet of this salad is marshmallows and because we are hot chocolate lovers we always have a bag in the pantry.

Light Tropical Ambrosia Fruit Salad

This delicious fruit salad recipe is perfect for any social gathering and is made of pantry staples. Your family will love it!

Ingredients

  • 1 cup crushed pineapple, drained
  • 1 cup mandarin oranges, drained
  • 1 cup maraschino cherries, drained and sliced into halves
  • 1 cup shredded sweetened coconut
  • 1 cup chopped pecans
  • 1 cup sour cream
  • 2 cup marshmallows

Instructions

Mixed drained crushed pineapple, oranges, and sliced cherry halves with coconut and pecans.

Add sour cream and marshmallows.

Fold mixture until sour cream is mixed well and chill.

Notes

For presentation set aside a few mandarin oranges and cherries to place near the top and gently stir. This will keep the fruit whole making the dish beautiful for serving.
