What’s For Supper #117 Valentine’s Day Dinner Idea

Hi, thanks for taking to read What’s For Supper this week! This week I we start off with Valentine’s Day. Like any southern mama, I feel the need to find a special way to celebrate each holiday. We are celebrating as a family tonight and I am going to decorate the table extra special for dinner tonight. So, this week you will get a little extra with shots of sweet treats I have practiced making for a cute dessert board and some lighter side dessert ideas because we need to take care of our hearts for the long run in this life.

Valentine's Day Dinner Ideas

Let’s not waste any time and get a start on planning dinner this week. Grab your planners and some fun colored pens and let’s begin!

Easy Valentine’s Day Dinner Treats

Create a simple dessert board using store-bought items or bake a few cookies and adorn with pink and red crystals. Keep it simple or go all out!

Simple black board with a few store-bought treats artfully arranged! So easy and so much fun!

A slightly healthier treat using Light Kettle Corn and a scatter of M & M’s, got even lighter with dark chocolate chips! I used Angie’s BOOMCHICKAPOP Sweet & Salty Kettle Corn Popcorn.

Valentine’s Day Dinner

I am choosing foods we would not normally have on a busy weekday night for our Valentine’s Day Dinner this year. Salmon with a creole mustard sauce, fresh asparagus roasted with olive oil with will pair nicely with the mustard sauce. A fresh strawberry and cucumber salad with a mint garnish.

Will serve this meal with a yummy Southern Peach and strawberry tea, so simple!

RECIPE

  • Black Iced Tea
  • Canned Sliced Peaches or Fresh (Use what you have)
  • Strawberries sliced
  • Lots of ice!
  • Wholesome White Cane Sugar (optional for those who like their tea sweet!

DIRECTIONS

Just add peaches and the syrup to the mason jar classes top with ice and tea, add strawberries on the top. Tonight I will add a fresh mint garnish!

I will also use my cube trays for ice as its presentation is more festive! Here is the set I use! In the picture is the ice from the freezer ice dispenser, which is fine, but the peaches kind of look like the ice so it’s a little confusing to the eye. But honestly, we drink it up so fast, we hard take notice, it is so darn tasty!

Valentine's Day Dinner Idea for Busy Family

I will be honest, I don’t follow recipes many times, as I enjoy creating new dishes and flavor combinations. I will share some links that will guide you if you would like a road map for the Creole Mustard Sauce, especially!

Roasted Salmon with Creole Mustard Sauce – I use coconut cream, we love the flavor and I adore it on any vegetable.

Oven Roasted Asparagus – A vegetable our picky eater has recently embraced! (Momma happy dance)

Strawberry and Cucumber Salad – I am leaving out the basil and subbing parsley! A girl has her own taste buds, you know?

DINNER IDEAS THIS WEEK

  • Tuesday – Tostada Melts -with mashed pinto beans topped with cheese and baked in the oven until cheese melts. I use the tostadas you can find in the big stacks already crunchy, bake on a wire rack in a preheated over at 400 degrees. Just schmeer on some mashed pinto beans flavored with your favorite taco seasoning, sprinkle on shredded cheese and maybe a little onion. Service with Pico de Gallo or salsa and maybe some shredded lettuce.
  • Wacky Wednesday- Churros and Spicy Hash Brown Casserole sort of Latin style breakfast for dinner. Or just serve the Churros for dessert!
  • Comfort Food Thursday – Simple Green Pea Soup with Mint (I am buying the large pack this week!) and a salad with any leftover cucumber and strawberries, along with some watermelon chunks. It’s hot in California right now, and summer salads are on my mind!
  • Friday – Dinner Out
  • Saturday – Pizza and a Movie Night – Store Bought Pizzas! Honestly, there are some pretty good ones out there now and I love Amy’s Dairy Free Vegan Pizza with Roasted Vegetables. My Favorite!
  • Sunday – Sandwich Bar with Tater Tots! I saw a recipe for Thai Tater Tots and I have been wanting to give it a go using my own ideas without even glancing at a recipe. We love Thai food, I am thinking a curry blend with a chili-honey dressings and a Thai basil and mint green garnish.
