What’s For Supper? #88 Summer Salads!
The weather is heating up here in Southern California and to top that our A/C needs to be replaced this month. This means I need to be prepared to be out of power possible a couple of days and keep the house as cool as possible.
My foodie answer for this week is Summer Salads! I love a good salad. And I don’t mean the Fresh Express bagged salad with a hint of cabbage and carrots. I mean gorgeous all you can stare at salads with a variety of vegetables, fruits, nuts, proteins, and greens!
This week menu is all Summer Salads and one night of takeout because a girl has got to have a night off!
Dinner Out! Happy Father’s Day to all the dad’s and to all the moms who are taking advantage of dinner out!
Cranberry Sunshine Summer Salad with Pan Fried Chicken in Olive Oil
BBQ Brisket Salad with lots of summer veggies and a good portion of leftover corn from the freezer.
Here is the corn recipe, sub out olive oil for the butter. Oven Roasted Corn on the Cob
Chicken Caesar Salad with leftover Pan Fried Chicken
Carrot sticks, strawberries, and grilled Garlic Bread to calm the picky eater!
BLT Layered Salad with Cornbread.
Yes, I will need to turn on the oven, but cornbread is so worth it! When the weather is hot I do baking early in the morning. I will also be baking the bacon as well.
Grilled Chicken Thighs, Ribeye Steak, and Vegetable Skewers
If the A/C is working I will bake some of my Granny’s Famous Baked Beans if not, then hello Three- Bean Salad.
BYOS- Build your own sandwich or salad. Mom’s Night off!
