Ingredients

  • 1 cup cottage cheese, about 225 grams
  • 1 cup sliced strawberries
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons honey, divided
  • ⅛ cup chopped pistachios
  • Fresh mint, optional
  • Lemon wedge, optional for serving

How to Make It

  1. Add sliced strawberries to a small bowl.
  2. Stir in the lemon juice and 1 teaspoon of honey.

For cottage cheese bowls, I often use a digital kitchen scale and measure the cottage cheese in grams. One cup of cottage cheese is usually about 225 grams, depending on the brand.

It may look like a whole lot of cottage cheese, but that is the main protein in this bowl. The strawberries bring fiber, sweetness, color, and all those good vitamins. The pistachios bring crunch, but just a small amount goes a long way.

I used honey in two places: a little mixed with the berries and a little drizzled over the cottage cheese. If you are watching calories closely, you can use less honey or skip the second drizzle. You do you, honey.

And yes, the fresh mint is technically optional, but it makes the bowl look beautiful and taste extra fresh. Mint is gorgeous, easy to grow, and one of my favorite little finishing touches.
