- 1 teaspoon black pepper, or to taste
- 8 lemon slices (about one slice per chicken thigh)
Instructions
- Preheat your oven to 400°F (205°C).
- Make the glaze:
In a medium bowl, whisk together the ketchup, soy sauce, garlic powder, paprika, salt, and pepper until smooth. - Prepare the chicken:
Arrange the chicken thighs in a 9×13-inch baking dish. (You can spray or butter the dish if you’d like, but bone-in chicken provides plenty of natural flavor and fat.) - Add the sauce:
Spoon the ketchup glaze generously over the chicken. Don’t skimp — you’ll want every bit of that sauce baked in! - Top with lemon slices:
Place one lemon slice on top of each chicken thigh, pressing it lightly into the glaze. - Bake uncovered:
Bake for 20–25 minutes, or longer if needed, until the internal temperature reaches 165°F (74°C). Cooking time may vary slightly depending on the size of the chicken thighs. - Rest and serve:
Let the chicken rest for 5 minutes before serving. The glaze will thicken slightly as it cools.
