Growing Up With Mexican Food and My Granny’s Fideo
Meal’s at my Granny Vega’s house were some of the tastiest memories of my childhood. No matter what day, there was always something fragrant cooking on the stove. Granny made hot tamales that nothing could come close to at local markets and the best beans cooked in a cast-iron skillet you will ever taste. But today we are talking noodles.
Family of Picky Eaters Love Fideo
Chicken Fideo was a dish we had when there was lots of family to feed and it was so, so good. The traditional dish has many steps and vegetables. I make with fresh chicken thighs bone-in and onions and peppers and so many good spices.
But we have picky eaters in the house and this version of Mexican Noodles or Fideo Seco is a crow pleaser, and it is especially good the second day.
You can also freeze the leftovers, which is an excellent way to meal prep for busy weeks.
How To Make Easy Kid Friendly Chicken Fideo
- Gather ingredients, Fideo pasta, chicken stock, chopped rotisserie chicken, tomato paste, your favorite Mexican seasoning blend, and some canola or olive oil to brown the pasta.
- In a large skillet that has a lid, add oil and cook on low- medium heat. Add Fideo and stir until noodles are coated in oil. Keep stirring noodles as they brown.
(Tip: Do not leave the frying noodles unattended, it can go from toasty golden brown to blackish brown pretty quickly. Keep moving the pasta in the pan to help brown evenly) - Add chicken broth and tomato paste and bring to a boil.
- Next, add Mexican seasoning (or spice blend recommended in recipe card below) and chopped chicken and stir.
- Reduce heat to low and simmer for 8 to 10 minutes until noodles are soft and it absorbs the chicken stock.
- Serve warm and garnish with fresh chopped cilantro or shredded cheddar cheese.

Kid Friendly Chicken Fideo Recipe
Easy Chicken Fideo recipe that even the picky eaters and kids will love. Simple ingredients and one-pan cooking! What is not to like?
Ingredients
- 3 tablespoons olive oil or canola oil
- 7oz bag Fideo pasta
- 2 - 3 cups chopped chicken (rotisserie)
- 1 box chicken stock
- 2 tablespoons tomato paste
- 2 tablespoon Mexican seasoning blend or 1 teaspoon each of chili powder, cumin, garlic powder, salt, and pepper.
- Optional: ½ cup shredded cheddar cheese or ½ cup chopped fresh cilantro for garnish
